The Lennox

  • 50 ml BACARDÍ Carta Oro (43% ABV)
  • 12.5 ml Perdo Ximenez sherry
  • 12.5 ml 1:1 Banana syrup *
  • 12.5 ml Fresh lemon juice
  • 12.5 ml Egg white
  • 4 dashes Aromatic Pimento bitters

Method: Shake and strain.
Glass: Coupette
Garnish: Lemon zest

* Take 1 part white granulated sugar to 1 part water(measured by weight) and place in a pot and dissolve sugar. Once the sugar is dissolved, add 1 part banana(measured by weight) and bring to a broil. Once at broil, place lid on the pot, remove from the stove plate and leave for 30 min. Strain off the banana and serve.

The Story

‘The Lennox’ is inspired by an extinct bar that went by the same name, where I fell in love with the craft of creating entertaining drinks that delivered pleasure to my patrons. It was here, surrounded by bright colored syrups, fresh fruit, juices and frozen daiquiris, that I learnt of the importance of self expression, non-conformism and how to host an incredible fun-filled experience!

Prior to this mind altering observation, of drinks combined with enticing service, being able to change an imbibers perspective on a very serious world, bartending to me had no more meaning than simply putting pennies in my pocket!

There I grew increasingly intrigued by the magic of this mixed liquid and became passionate, dedicated and devoted to perfecting my craft. In honour of this watering hole, I dedicate this tipple, to Don Facundo Bacardi Masso, who stood for the same principles: creating something unique to bring people together and to celebrate life.

Denzel Heath

Head Trainer for Thirst Bar Academy and Africa’s largest training program, the Master Bar Academy, Denzel Heath, has 15 years local and international bar experience predominantly gained in New York, Florida and South Africa. Having been involved in every level of successful bar operation, including ownership, he has also provided training in several African and Middle Eastern countries such as Uganda, Ghana, Zambia, Mozambique, Botswana, Namibia, Egypt, Angola, Oman, Qatar and Mauritius. Satisfied clients include FIFA, Four Seasons, Sun International, Tsogo Sun, Starwood Hotels, Grand Hyatt Hotels, Protea Hotels, Varsity College, Damelin College and the International Hotel School.

He is the current Bacardi Legacy South African Champion due to represent his country in Sydney at the Global finals in May 2015. In his most recent successes he has represented South Africa in international cocktail competitions in France, Mexico, Trinidad and Tobago and Mauritius. He has also repeatedly advanced as a top finalist in the South African National Bartending Championships.

In 2014 he was selected to complete the Cocktail Apprentice Program at the acclaimed Tales of the Cocktail in New Orleans. He has completed his Wine and Spirit Education Trust (WSET) Spirit Level 2, as well as the acclaimed Beverage Alcohol Resource BAR 5Day Course – the most prestigious Spirit and Mixology Program on the globe. He is currently completing his USBG qualification to become a certified Spirit Professional.

In the event bar industry he has serviced national clients and campaigns such as the FIFA Soccer World Cup, Super 14, Tri Nations and PSL Cash and Hospitality Bar Operations, U2 360 Tour, Kings of Leon SA Tour, Coldplay SA Tour, Linkin Park SA Tour, Neil Diamond SA Tour, KFC Taste of Fame, J&B Start a Party, Channel O Music Awards, Metro FM Music Awards, Standard Bank Joy of Jazz Festival, South African Fashion Week, and a multitude of liquor brand trade launches and activations.
